Red Velvet Puppy Chow.

ingredients
5 C. Rice Chex cereal
3/4 C. white chocolate melts or chips
1/4 C. chocolate melts or chips
2 oz cream cheese, room temp
1 1/2 Tbsp. milk
1 C. Red Velvet Cake mix
1/2 C. powdered sugar
Valentines colored M&M's or other candies
Heart sprinkles for extra decoration and cute-ness
directions
1. Measure out Rice Chex cereal and place into a large bowl.
2. Place cake mix and powdered sugar into a large plastic bag or tupperware with a lid.
3. Melt chocolates together in the microwave or on the stove top. Careful not to burn and stir until smooth.
4. Stir in cream cheese and milk (the chocolate will get thicker, but it's okay)
5. Pour chocolate over Rice Chex cereal and stir until coated.
6. Dump cereal into the bag or tupperware with powdered sugar and cake mix. Shake, shake, shake until coated.
7. Dump onto a cookie sheet and let cool.
8. Mix with extra colorful candies and serve!
NOTE: Because of the cream cheese, keep in the fridge if you won't be eating them that day. You can also omit the cream cheese all together if you wish...if you do that, you don't need the milk either!

A Valentines Day Parfait.

ingredients

One 3.9oz. package of chocolate instant pudding
One 3.9oz. package of white chocolate instant pudding
4 cups of milk
red food coloring
1 container of whipped topping, defrosted
1 chocolate candy bar
pink or red sprinkles (optional)

directions

Prepare the chocolate pudding as directed with 2 cups of milk and put in the refrigerator to set. Pour 2 cups of milk in a second bowl to make the white chocolate pudding.  Before you dump the packet in the milk, stir in 6 drops of red food coloring to turn the milk pink.  Then add the white chocolate pudding mix and whisk together until blended.  Put in the refrigerator to set.  After about 5-10 minutes the pudding should be firm.

Take 1/3 of the chocolate pudding and put it into an empty bowl.  Do the same thing with the pink white chocolate pudding.  Mix into each of those smaller amounts 1/3 of the whipped topping.  You should now have 4 bowls: one with chocolate pudding, one with pink white chocolate pudding, one with chocolate pudding mixed with whipped topping, and one with pink white chocolate pudding mixed with white topping.
Layer the puddings into 4 wine glasses or serving dishes in any order you’d like.  Try to spread out and smooth out each layer with the back of  a spoon before adding the next layer. Finish with a dollop of cool whip, dividing the remaining 1/3 of the container among all 4 dessert cups..  Make chocolate curls by peeling the chocolate bar with a vegetable peeler and garnish the pudding cups with them.  Finish it off with some pink or red sugar sprinkles if you’d like!

(Serves 4, but you could probably stretch it beyond that especially if you used smaller serving dishes.)
See?  Super easy and aren’t they pretty?  I can’t wait for my daughter to see them.  She loves fancy desserts.
Here are a few more helpful tips:
  • When you’re dividing your puddings into thirds to scoop some out to mix with the whipped topping, take a knife and draw a peace sign in the pudding.  This will evenly divide the pudding up into thirds.  Then scoop out one triangle.
  • Keep a paper towel handy.  It’s hard to not smudge some of the pudding along the walls of the glass when you’re dropping in the layers. If you make a little smudge just wipe it clean with your paper towel.
  • You could easily adapt this to any holiday. Change the pink to green for St. Patty’s day, or just mix up a couple different pastel colors for Easter.
Enjoy!

Hot Chocolate S'mores.

Graham Crackers
(You can make your own graham crackers (Perfect Graham Crackers  - recipe) to make the hearts!)
1cup semi Sweet Chocolate Chips
Micro Mini Marshmallows
Hot Chocolate

directions

  • Bake the cookies, using the Graham Cracker recipe, using a fluted pastry wheel cut cookie dough into 4 1/2 inch long and 1 inch wide strips. Remember to cut out equal amount of hearts. I was able to make 15 assembled cookies stick using the recipe.
  • (If you don't care to make the hearts, just use regular graham crackers, they will just be a little larger)
  • Melt 1cup chocolate chips.
  • Spoon some chocolate on the cookie stick.
  • While chocolate is still melted using your fingers, distribute micro marshmallows on the top. Let  the chocolate set.
  • Using a bit of chocolate, spread some on the heart graham cracker and attach heart cookie onto a cookie stick.
  • Let chocolate harden before handling.
